The food of the Jewish table is inextricably linked to the history of its people. From the time of their first exile in 70CE (AD), Jews have adopted the flavours of the lands they dwelt in. Each time they were forced to flee they re-established thier community in a new country, taking on the new foods found there, always in keeping with the basic laws of the Kashrut. Even the religious table is tightly bound up with history. Holidays commemorate the events of the past and demand traditional and ritual foods - from the matzos of Pesach to the fried dishes of Chanukkah, and the sweet foods of Rosh Hashanah.
