Made in Modena, this flavorful vinegar is grown from the "Trebbiano" grapes, which are cooked on a fire and aged in wooden casks. Each year, the vinegar is decanted from a bigger cask to a smaller one made from different wood. These casks are then aged in warm, humid free attics resulting in a richly colored vinegar with an exquisite aroma that cannot be reproduced anywhere else in the world. Balsamic vinegar is naturally sweeter than other vinegars. Use it sparingly and creatively in salad dressings and for dressing charcuterie and vegetables; it can also be used to deglaze a pan after cooking meat or roasting vegetables; or to enrich and slightly sharpen sauces.
